Ingredients
- 2 1/4 teaspoons active dry yeast,
- 1/4 cup warm milk,
- 2 tablespoons honey,
- 4 cups all-purpose flour,
- 1 teaspoon salt,
- 1/2 cup baking soda,
- 1/2 cup egg whites,
- 1 tablespoon water,
- 1 tablespoon fine sea salt
Instructions
- Prepare the oven by preheating it to 450°F.Set aside a baking sheet lined with parchment paper.
- In the bowl of an electric mixer, add milk. Stir the yeast and honey into the mixture before serving. Allow to rest for about ten minutes. When the yeast is ready, it will look like a foam.
- Over medium-high heat, bring about half of the water in a large pot to a boil.
- Set aside the egg whites after combining them with one tablespoon of water.
- In a mixer, add flour and one teaspoon of salt. Using the paddle attachment, mix on low for about three minutes until the dough forms a ball. If necessary, add more flour. The dough will stick together but not to your hands.
- Form the dough into a ball on the counter top. Flouring your counter is not necessary. Roll each portion of the dough into a long strand and divide it into four equal parts. Using a butter knife, divide each strand into sections of one inch. Each strand should yield about 12 to 16 bites.
- Add baking soda to boiling water with care. Add slowly because the baking soda will bubble up. Ten dough bites at a time, place them in boiling water, and “flash cook” each batch for 20-30 seconds. Remove the dough from the water with a slotted spoon and allow it to cool.
- Place each flash-cooked pretzel bite on a baking sheet lined with parchment paper so that they are not touching. Sprinkle coarse sea salt over each bite before brushing it with the egg white mixture.
- The tops should be browned after 10 minutes of baking. Allow to cool slightly after taking it out of the oven.

- The dough for the pretzel bites should cling together while NOT sticking to your hands as you prepare it. If it needs assistance shaping into dough, add extra flour.
