Chow Mein – Delicious chow mein noodles with a Panda Express-like flavor!

I just recently realized that I’ve been copying recipes a lot lately! I recently shared the Shamrock Shake from McDonald’s and the pancakes from IHOP, and today’s copycat is the Chow Mein from Panda Express! This is, without a doubt, my favorite. It tastes better than the Panda Express variety!

When I served this delicious chow mein with our favorite baked sweet and sour chicken, I fooled my kids. When I served the noodles at dinner, they thought I had brought them from the restaurant because I photographed them and made the noodles while they were at school.

They all asked for seconds after devouring it in a matter of minutes. I informed them that I had made it entirely from scratch after we had finished eating. They were speechless. “Mom, yours is WAY better than Pandas!” Kallen exclaimed. Oh, how I adore that child. I completely concurred with him.

Chow Mein Ingredients

Chow Mein

  • two packs (7.32 ounces, each) of stir-fried yakisoba noodles in the fridge (discard the spice packet)
  • Vegetable oil, three tablespoons
  • Chopped half of a tiny yellow onion
  • 1/3 cup finely chopped kale
  • a third cup of chopped celery
  • Low-sodium soy sauce, two tablespoons
  • Oyster sauce, 1 tablespoon

Instructions

Chow Mein

  1. In a large nonstick skillet or wok, heat the oil to medium-high. Heat the skillet with oil.
  2. Include the chopped celery, cabbage, and onion. Cook, stirring frequently until vegetables are tender and beginning to caramelize. Turn down the heat to medium.
  3. In the meantime, cook the noodles according to the package directions in the microwave for one minute.
  4. Drain the noodles and rinse them in warm water. Add to skillet’s vegetables. Add oyster sauce and soy sauce. Mix everything together with a mixer.
  5. Serve right away, and enjoy!
