Typically, there are two options when working with breading: baking and frying. There is enough fat in this recipe, thanks to the Parmesan cheese and the olive oil, to help the breading brown.
Make sure to space out each piece of chicken from the one after it when baking the chicken. This helps the crust color uniformly while preventing the chicken from boiling during cooking.
Parmesan Crusted Chicken Ingredients
- 6 ounce pieces of chicken tenderloin from four chicken breasts
- 1/2 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 cup olive oil
- 1 cup shredded parmesan cheese
- 1 cup panko bread crumbs
Instructions
- The oven should be at 350 degrees.
- Rub olive oil and salt, pepper, and seasoning on the chicken until it is evenly coated.
- Before pressing the chicken into the mixture, combine the breadcrumbs and Parmesan in a medium bowl. Make sure the chicken is completely covered.
- Add it to a baking pan and bake for 30-35 minutes, flipping them carefully with a spatula halfway through.
