  • 1.5 pounds (700 grams) of skinless, boneless chicken breast
  • 2 medium eggs
  • 1/3 cup (40 grams) of almond flour
  • 1 cup (110 grams) of shredded mozzarella cheese
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon of garlic powder
  • a pinch of sea salt and freshly ground black pepper, or to taste.
  • 1 tablespoon or more of olive oil to fry

  1. Using a sharp knife, cut the chicken breast into small pieces and place them in a large mixing bowl. Place the chicken breast on a chopping board.
  2. Add almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper to the large bowl. Combine thoroughly.
  3. In a large nonstick pan, heat the oil to a medium-low temperature. Scoop into the chicken mixture using an ice cream scoop or a large spoon.
  4. Transfer to the pan and slightly flatten to make a fritter. Cook the fritters in batches of four to avoid crowding the pan.
  5. Fry for 6 to 8 minutes or until both sides are golden brown. Keep in mind that you must cook them at a medium-low temperature; otherwise, the outside will burn but the inside will not be cooked thoroughly.
  6. Serve it with your preferred dip.
