Chicken Gyro Bowls
Chicken Gyro Bowls make a quick and simple, healthy dinner with all the flavor and ingredients from a traditional Greek sandwich! On top of a rice bed, there is a heap of feta cheese, tzatziki, fresh veggies, and marinated chicken.
Chicken Gyro Bowls Ingredients
Chicken Marinade
- The best 1/4 cup of plain Greek yogurt is full fat or low fat.
- two teaspoons of lemon juice, fresh
- 2 grated garlic cloves
- 2 tablespoons of flat leaf parsley, chopped
- Olive oil, 1 tbsp
- 1 and a half teaspoons of dried oregano
- a half-teaspoon of smoked paprika
- 1/8 teaspoon cumin powder
- 1/8 teaspoon coriander powder
- To taste, add salt and freshly ground black pepper.
- 1 1/4 pounds of bite-sized, boneless, skinless chicken breasts
Tzatziki sauce
- 1 cup of cucumbers that have been diced or shredded
- 1 1/2 cups non-fat, 2%, or full Greek yogurt
- two teaspoons of lemon juice, fresh
- 1 tablespoon freshly chopped dill
- grated garlic, 1/2 teaspoon, or 1 teaspoon if you want it really garlicky.
- To taste, add salt and freshly ground black pepper.
Chicken Gyro Bowls Other Ingredients
- 1 cup of cherry tomatoes, quartered
- 1 cup cucumbers, diced
- 1/4 cup red onion, chopped
- Kalamata olives, 1/3 cup
- 1/2 cup feta cheese crumbles
- 2 cups of brown rice, cooked
Instructions
- In a bowl, combine all of the ingredients for the chicken marinade and stir until well combined. The cubed chicken should be added and left to marinate for 30 minutes.
- The tzatziki sauce is made while the chicken is marinating. Mix all of the components together and taste for seasoning. Keep in the fridge until ready to serve.
- Add enough olive oil to coat the bottom of a large skillet over medium heat. Spread the chicken out in a single layer after adding it. Before turning it over, let it brown for three to four minutes. Cook for an additional four to five minutes, or until cooked through.
- Fill each bowl with rice before adding some of the chicken, cucumbers, tomatoes, red onion, kalamata olives, crumbled feta, and tzatziki sauce to it.
