Chicken Marinade

  • The best 1/4 cup of plain Greek yogurt is full fat or low fat.
  • two teaspoons of lemon juice, fresh
  • 2 grated garlic cloves
  • 2 tablespoons of flat leaf parsley, chopped
  • Olive oil, 1 tbsp
  • 1 and a half teaspoons of dried oregano
  • a half-teaspoon of smoked paprika
  • 1/8 teaspoon cumin powder
  • 1/8 teaspoon coriander powder
  • To taste, add salt and freshly ground black pepper.
  • 1 1/4 pounds of bite-sized, boneless, skinless chicken breasts

Tzatziki sauce

  • 1 cup of cucumbers that have been diced or shredded
  • 1 1/2 cups non-fat, 2%, or full Greek yogurt
  • two teaspoons of lemon juice, fresh
  • 1 tablespoon freshly chopped dill
  • grated garlic, 1/2 teaspoon, or 1 teaspoon if you want it really garlicky.
  • To taste, add salt and freshly ground black pepper.

  • 1 cup of cherry tomatoes, quartered
  • 1 cup cucumbers, diced
  • 1/4 cup red onion, chopped
  • Kalamata olives, 1/3 cup
  • 1/2 cup feta cheese crumbles
  • 2 cups of brown rice, cooked

Instructions

Chicken Gyro Bowls

  1. In a bowl, combine all of the ingredients for the chicken marinade and stir until well combined. The cubed chicken should be added and left to marinate for 30 minutes.
  2. The tzatziki sauce is made while the chicken is marinating. Mix all of the components together and taste for seasoning. Keep in the fridge until ready to serve.
  3. Add enough olive oil to coat the bottom of a large skillet over medium heat. Spread the chicken out in a single layer after adding it. Before turning it over, let it brown for three to four minutes. Cook for an additional four to five minutes, or until cooked through.
  4. Fill each bowl with rice before adding some of the chicken, cucumbers, tomatoes, red onion, kalamata olives, crumbled feta, and tzatziki sauce to it.
