  • 4 skinless, boneless breasts of chicken
  • 1 package of dried ranch dressing
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper, ground
  • 1 10-ounce can of Green chiles and chopped tomatoes from Rotel (do not drain)
  • 1 can of whole kernel corn, 15 oz (drained)
  • one 15-ounce can of black beans (drained and rinsed)
  • 1 block of plain cream cheese, 8 ounces
  • Freshly squeezed limes, two
  • 1/2 cup chicken stock

Instructions

Crock Pot Fiesta Chicken

  1. In the Crock Pot, place the chicken breasts. Rotel tomatoes, drained and rinsed black beans, drained corn, onion powder, ranch seasoning, and black pepper are now included.
  2. Top with freshly squeezed lime juice. After that, layer a cream cheese block on top of the ingredients and cover with chicken broth.
  3. Cover the slow cooker with a lid. Cook for 3 to 4 hours on HIGH or 5 to 6 hours on LOW. When the internal temperature of the chicken reaches 165 degrees, it is done.
  4. Take the chicken out of the slow cooker. Utilizing two forks shred the chicken and add once again into the Stewing pot.
  5. Mix everything together with the cream cheese until it covers everything.
  6. Enjoy while it’s hot!

  • Bowl of Burritos: Place the fiesta chicken on top of the rice layer. Then, top it with your favorite toppings, like pico de gallo, guacamole, sour cream, shredded lettuce, and tortilla strips. Then, top with a little bit of shredded cheese.
  • Salad: Sprinkle cheddar cheese on top of a tortilla that has been placed in the bottom of a bowl. Use an oven or microwave to melt the cheese. Then, add fiesta chicken, shredded lettuce, guacamole, pico de gallo, shredded cheese, and tortilla strips to the rice with cilantro. Then add your #1 dressing over the top.
