Doritos Chicken Casserole

When it comes to planning my meals for the week, I always have the best of intentions, but I’ll be brutally honest… Usually, I’m rushing to plan dinner!

This tasty Doritos chicken casserole recipe is a delicious dinner time crowd-pleaser!

I tossed this amazing Doritos chicken casserole together on a haphazard school night. I was shocked to see how much my family loved this savory and entertaining feast! My kids frequently ask me when I’ll be making the Doritos casserole again because they loved it so much!

To make it even simpler, I like to use a rotisserie chicken in this recipe, but you may use any cooked chicken of your choice.

Doritos Chicken Casserole Ingredients

  • 1 (14.5 ounces) container of nacho cheese. Lightly crumbled Doritos
  • Shredded and diced rotisserie chicken, in quantities of two and a half to three cups
  • 1 can of rinsed and drained black beans
  • 1 (15.25 ounce), drained can of corn
  • 8 ounces of split and shredded Colby jack cheese
  • Green chilies and mild diced tomatoes, 10 oz (Ro-tel)
  • 1 can of green chiles, 4 oz.
  • 1 condensed cream of chicken soup (10.75 ounces) can
  • sour cream, 8 ounces
  • 1/4 cup taco seasoning
  • optional garnish of cilantro

Instructions

This tasty Doritos chicken casserole recipe is a delicious dinner time crowd-pleaser!

  1. Bake at 350 degrees Fahrenheit. Spray a baking dish measuring 9 x 13 inches lightly with cooking spray.
  2. In the prepared baking dish, place half of the crushed chips on the bottom.
  3. Combine the chicken, corn, black beans, 1 cup of cheese, Ro-tel, green chiles, cream of chicken soup, sour cream, and taco seasoning in a large bowl.
  4. Over the chips in the baking pan, distribute the mixture evenly.
  5. Bake for two hours. Sprinkle the remaining cheese on top, then evenly distribute the remaining chips over the top. The cheese should be melted after another 5 to 7 minutes of baking. Optional cilantro garnish:
