Chocolate Mousse Ingredients
- a 4-ounce baking bar of semi-sweet chocolate
- 1 tablespoon of salted normal butter
- 1 teaspoon of granulated instant coffee
- 1/3 cup of granulated sugar
- Dutch-processed cocoa powder, 1/4 cup
- Heavy whipping cream, 1 and 1/4 cups
- Vanilla extract, 1 teaspoon
Instructions
- In a large microwave-safe bowl with the butter and instant coffee, finely chop the baking bar. Microwave for 15 seconds, stirring halfway through, until melted. It’s okay if you still see the instant coffee granules.)Place aside.
- Combine the cocoa powder and powdered sugar; place aside.
- Whip the heavy cream in a large bowl until it forms a foam. Scrape down the sides of the bowl as necessary as you add the powdered sugar-cocoa powder mixture gradually until it is fully combined.
- Incorporate the vanilla.
- Don’t overmix; continue whipping until stiff peaks form.
- Fold in 1/3 of the whipped cream to the melted chocolate in the bowl until there are no more streaks. Fold it in very gently the second time you do this.
- Divide the chocolate mousse among dessert cups made of glass. Sprinkle with chocolate shavings and pipe some fresh whipped cream on top. Sublime!
- NOTE: The mousse will have a lighter texture when served right after it has been mixed. The consistency of the mousse will become thicker if it is completely chilled.
