Greek Chicken Bowls

Greek Chicken Bowls contain a lot of Greek flavor! Lemon dill rice is topped with spiced ground chicken, a cucumber-tomato salad, and tzatziki sauce made from Greek yogurt. Both on the day you make it and as leftovers the next day, it is great!

My passion for Greek and Mediterranean cuisine is probably well known to you if you’ve been reading my blog for a while. When I have a hectic week, I love to meal prep these healthy chicken shawarma bowls and am enamored with this Greek orzo salad.

Greek Chicken Bowls Ingredients

Greek Chicken Bowls

Tzatziki Sauce

  • Juice from half a cup of shredded cucumbers has been squeezed out.
  • 1 cup of Greek yogurt, plain
  • two teaspoons of lemon juice, fresh
  • 1 tablespoon freshly chopped dill
  • a quarter-teaspoon of garlic powder
  • To taste, add freshly ground black pepper and kosher salt.

Cucumber Tomato Salad

  • 1 cup of quartered cherry tomatoes
  • 1 cup cucumbers, diced
  • 1/4 cup red onion, chopped
  • chopped 1/4 cup kalamata olives
  • two tablespoons of flat leaf parsley, chopped
  • Red wine vinegar, 2 tablespoons
  • 1/9 cup olive oil
  • To taste, add freshly ground black pepper and kosher salt.

Greek Chicken

  • Olive oil, two teaspoons
  • 1 pound of lean chicken breast ground
  • Red onion, diced, in half; flat leaf parsley, minced; two tablespoons
  • Oregano, dry, 1 teaspoon
  • one-half teaspoon of garlic powder
  • 1/8 teaspoon coriander powder
  • 1/8 teaspoon cumin powder
  • 1/8 teaspoon of cinnamon powder
  • To taste, add freshly ground black pepper and kosher salt.
  • Lemon’s zest
  • two teaspoons of lemon juice, fresh

Rice

  • two cups of boiled rice
  • 2 teaspoons freshly chopped dill and 2 tablespoons lemon juice
  • To taste, add freshly ground black pepper and kosher salt.

  • feta cheese in crumbles

Instructions

Greek Chicken Bowls

Tzatziki Sauce

  1. Whisk together all of the tzatziki ingredients in a bowl until well-combined. Cover, taste for seasoning, and chill until ready to serve.

Cucumber Tomato Salad

  1. Place all of the salad’s ingredients in a bowl. Taste for seasoning and combine everything. Cover and refrigerate until prepared to serve.

Rice

  1. Whisk together the rice, dill, lemon juice, salt, and pepper. Check the seasoning. In order to save time, use par-cooked rice in a microwave-safe bag.

Greek Chicken

  1. In a large skillet, heat the olive oil to medium-high heat. Crumble the chicken with a wooden spoon after adding the diced onion and ground chicken to the skillet. Salt and pepper, the chopped parsley, and all of the spices are used to season the chicken.
  2. Add the lemon juice and zest after the chicken is almost done cooking. Mix everything together.

Putting the Greek Chicken Bowls Together

  1. Divide the rice among four bowls. Spread Greek chicken, cucumber and tomato salad, tzatziki sauce, and crumbled feta on top in equal portions. If desired, garnish with additional parsley and a lemon wedge.
