Low-Carb Bacon Cheeseburger Casserole

Both my spouse and I loved this meal. My hubby isn’t on Keto, but I am. I changed a couple things: like others, I cooked the bacon ahead of time, and I substituted half-n-half for heavy cream (which is still keto friendly). Additionally, I baked it for about 20 minutes before adding the cheese and bacon on top rather than inside the dish. On the side, I placed the usual hamburger fixings. I’ll absolutely cook it again because it was so good.

Bacon Cheeseburger Casserole Ingredients

  • 2 pounds of beef, ground
  • 2 minced garlic cloves
  • 1/2 tsp. of onion powder
  • 1 pound of chopped, cooked bacon
  • 8 eggs
  • 1 cup heavy cream for whipping
  • Salt, 1/2 teaspoon
  • 1/4 teaspoon of black pepper, ground
  • 1 (12 ounce) box of split shredded Cheddar cheese

Instructions

  1. Set the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a large skillet, heat the oil to medium-high. Beef should be cooked for 5 to 7 minutes, stirring in garlic and onion powder, until browned and crumbly. Remove and drain the grease.
  3. Fill a casserole dish measuring 9 x 13 inches with beef. Mix in the bacon pieces.
  4. In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined. Add 8 oz. of Cheddar cheese and stir.
  5. Spread the beef and bacon over the egg mixture. Top with the excess 4 ounces cheddar.
  6. Bake for 30 to 35 minutes in a preheated oven until golden brown on top.
