  • 1 cup flour
  • 1 teaspoon sugar
  • 1 teaspoon cornmeal
  • 2 tbsp. baking powder
  • 2 teaspoons salt
  • 3/4 cup milk
  • 2 1/2 cups finely chopped onions
  • frying oil or shortening

Instructions

Onion patties

  1. Combine all of the dry ingredients in a large bowl, then stir in the milk. You’ll get a thick batter from this.
  2. Mix in the onions until well combined.
  3. In a skillet, heat 1/2 inch of oil over medium heat. Drop the batter into the hot oil in tablespoons.
  4. Use a spatula to flatten the dough, and then cook on both sides until crispy and golden brown.
  5. Sprinkle salt to taste, drain on a piece of paper towel.

A Pro Tip: Before cooking, you can add 1/4 cup cooked, crumbled bacon to the batter to make these even more delectable. Other delicious additions include: 1/4 cup cooked mushrooms, 1/4 cup green pepper, or cheddar can be sprinkled on top after cooking. So. Delicious.
