  • 1 pound (500 grams) of boneless, skinless, thinly sliced, 1/4 inch thick chicken breast
  • Vegetable oil, two tablespoons
  • 2 cups cleaned and quartered mushrooms
  • 1 substantial zucchini, quartered
  • 3 minced garlic cloves
  • 1 teaspoon finely chopped ginger

Chicken Marinade

  • Light soy sauce, two tablespoons
  • a teaspoon of rice vinegar
  • one teaspoon of sesame oil
  • corn starch, two tablespoons

Sauce

  • 1/4 cup light soy sauce and 1/2 cup water
  • Oyster sauce, two tablespoons
  • a teaspoon of rice vinegar
  • Brown sugar, 2 tablespoons
  • Cornstarch, one tablespoon

Instructions

  1. Make the marinade by combining all of the ingredients in a medium bowl. Mix in the chicken to coat; marinate for 20 to 30 minutes or overnight.
  2. In a separate small bowl, combine the sauce ingredients. Put it away.
  3. In a large skillet, heat oil to a high temperature. In order to achieve a good sear, add the chicken to the skillet in a single layer when the skillet is smoking. Cook, flipping and mixing as necessary, until browned. Remove the cooked food from the skillet and place it in a bowl.
  4. Cook, stirring frequently, the zucchini and mushrooms in the skillet until crisp tender (about 2 to 3 minutes).
  5. Return the chicken to the skillet and reduce the heat to medium-low. Cook, stirring frequently, for one minute before adding the ginger and garlic.
  6. Last but not least, add the sauce to the skillet and stir everything to coat. Stir-fry until the sauce becomes more thick.
  7. Serve right away.

Notes

  • You will get softer, more flavorful chicken if you marinate the chicken for a longer period of time. Depending on your preferences, a marinade should be prepared for at least 30 minutes. The flavor of the chicken will be richer and there will be a lot of soft, juicy chicken if you marinate it for the entire night.
