Ingredients

  • 4 medium zucchini, diced into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • 4 minced garlic cloves
  • 1 cup frozen, canned, or fresh corn kernels
  • 1 cup rinsed canned black beans
  • 1 tablespoon Italian seasoning
  • 1/2 tablespoon ground cumin
  • 1/4 cup grated Parmesan
  • salt and pepper, to taste.

Instructions

  1. Heat one tablespoon of oil in a huge skillet over medium-high intensity. Cook, stirring frequently, until zucchini just begins to soften, about 3 to 4 minutes; It ought to remain clear and brilliant green.
  2. Place on a plate and season with salt and pepper.
  3. Garlic can be sautéed for one minute by adding the remaining oil to the heated pan. Add the seasoning, beans, and corn.

Parmesan Zucchini Corn Salad
