Moving on to the main attraction of today’s post: this Whole30 Breakfast Casserole, which includes delicious turkey sausage, eggs, a slew of fresh veggies like peppers, onion, and spinach, and my favorite onion and herb spice blend to bring it all together!

One of the reasons I like this Whole30 Breakfast Casserole so much is that I can make it on a Sunday and have breakfast ready for the entire week.

I also like using this awesome casserole dish because it allows me to make and store it in the same dish.

Sausage and Egg Whole30 Breakfast Casserole Ingredients

Sausage and Egg Whole30 Breakfast Casserole

  • 1 pound breakfast sausage that is Whole30 compliant (I use Butterball All-Natural Fresh Turkey Breakfast Sausage)
    olive oil for pan
  • 1 diced white or yellow onion
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach, chopped (or 16 ounces frozen, thawed and drained) (or 16 ounces frozen, thawed and drained)
  • 1/2 tsp garlic powder
  • 1 teaspoon Mrs. Dash Onion & Herb Seasoning (salt-free) (or other salt-free seasoning)
  • season with salt and pepper to taste
  • 12 eggs
  • 4 drops of hot sauce (more or less, to taste) (more or less, to taste)

Instructions

Sausage and Egg Whole30 Breakfast Casserole

  1. In a large skillet over medium-high heat, coat the turkey sausage with a little olive oil and cook it until fully cooked. Preheat the oven to 350 degrees. Reserve the meat after draining it. In the same skillet, cook the peppers and onions for about 2 minutes until they become slightly soft.
  2. Cook for a further minute after adding the chopped spinach. Put the heat off.
  3. Add all of your seasonings and the turkey sausage back to the pan. Stir well to combine.
  4. Crack 12 eggs into a medium bowl and thoroughly whisk.
  5. In a non-stick olive oil-sprayed glass 9 x 13 baking dish, combine the sausage and vegetable ingredients.
  6. Bake for 25 to 30 minutes, or until a knife comes out clean in the center, then top with the egg mixture.
  7. Slice and serve after 5 to 10 minutes of cooling. Enjoy your delicious breakfast casserole from the Whole30 diet!
