  • one teaspoon of onion powder
  • one teaspoon of ground coriander
  • one-eighth teaspoon of crushed red pepper

  • two cups of chopped broccoli

  • 1 medium cauliflower chopped into florets
  • 1/4 teaspoon minced garlic
  • 1 teaspoon of clarified butter or ghee

  1. In a medium bowl, combine the chicken, 1 tablespoon olive oil, thyme, paprika, onion powder, coriander, crushed red pepper, salt, and pepper.
  2. Preheat the oven to 450°F.Set aside everything by tossing it all together.
  3. Place the chicken on a baking sheet lined with aluminum foil or parchment paper and roast for approximately 15 minutes.
  4. Add all of the vegetables to a medium bowl and season with two tablespoons of olive oil, salt, and pepper.
  5. Place all of the vegetables on the same baking sheet after removing the sheet from the oven.Roast for an additional ten minutes, then spread everything out in an even layer.
  6. Make the mashed cauliflower while the chicken and vegetables are baking.

For The Mashed Cauliflower of Spicy Chicken Meal-Prep Bowls

  1. Bring about two cups of water to a boil in a large pot.
  2. After that, insert a steamer basket into the pot’s base.
  3. Place the florets of cauliflower in the steamer basket.
  4. Cover the pot and steam the cauliflower for 6 to 8 minutes, or until it is fork-tender.After removing the cauliflower from the heat, allow it to cool for five minutes by uncovering the pot (this step is critical).
  5. Blend the garlic and steamed cauliflower in a blender jar until the cauliflower is completely smooth.Add the clarified butter, mayonnaise, salt, and ground black pepper to a bowl and stir to combine.
  6. Adjust the seasoning by tasting.

MEAL PREPPING:

  1. Four glass containers should each have an equal amount of chicken, vegetables, and mashed cauliflower. Place in the refrigerator for up to 4 days while covered with the lid. For 11–2 minutes, microwave the food. The length of time depends on how strong your microwave is.
